The agave piñas are roasted in a conical earthen pit over hot rocks for three days, followed by an extended wild fermentation. The mezcal is then distilled using the ancestral clay stills traditional to Santa Catarina Minas. Bottled at a verified 49% ABV (98 proof), Del Maguey Arroqueño delivers a fascinating combination of ripe fruit, chocolate, vegetal character, earth, and minerality.
